Heat oil in a pan and add mustard seeds. Let them splutter.
Add curry leaves and sauté for a few seconds.
Add turmeric powder, red chili powder, salt, and asafoetida. Mix well.
Add sev, roasted peanuts, roasted chana dal, puffed rice, and cashew nuts. Mix everything together.
Fry the mixture on low heat for 5-6 minutes until it becomes crisp and all the flavors meld together.
Let it cool completely and store in an airtight container.
